Our extra virgin olive oil is made entirely from selected Serrana olives, grown in the Espadán and Calderona mountain ranges. A true treasure from the Valencian Community.
This native variety, already used by the Iberians thousands of years ago, was on the verge of disappearing. Today, VOLATS is reviving it through centuries-old olive trees and an early harvesting process with cold pressing.
