Our extra virgin olive oil is made exclusively with carefully selected Serrana olives from the Sierra de Espadán — a true gem gifted by the Valencian Community. This unique olive variety, combined with early harvesting and cold pressing, produces an olive oil with a one-of-a-kind flavor and texture.
VOLATS offers a fruity taste with fresh grass notes and a subtle spiciness, delivering a rich, balanced aroma and a silky texture.
DESIGNED WITH ANA ROQUERO
More than a container
At VOLATS, we express ourselves through design. We aim to create an emotional connection around the experience of consuming olive oil in a beautiful, environmentally respectful way. That’s why we collaborated with Ana Roquero, co-founder of CookPlay, to create a sensorial, organically shaped bottle. Our ceramic vessel is reusable, handmade from stoneware in Manises (Valencia), a region known for its ceramic tradition. The caps are crafted from wood and natural cork.

At VOLATS, we bottle our oil on the same day it’s harvested, ensuring every bottle reflects the vitality and richness of freshly picked olives.
To make freshness a reality (not just a promise), we use an innovative vacuum storage system — Bag in Box. This method keeps the oil inert, protecting it from light and air, the main causes of oxidation.
Our technology preserves the organoleptic properties of our premium olive oil. Antioxidants, polyphenols, and vitamin E remain intact, ensuring every drop of VOLATS is not only fresh but also beneficial to your health and wellbeing.
SIERRA ESPADAN AND CALDERONA
OLIVE TREES, GUARDIANS OF TIME
Step into the heart of the Sierra de Espadán — a natural treasure designated a Nature Park in 1998, where ancient olive trees and majestic mountains whisper stories of the past. Its peaks rise over 1,000 meters and are silent witnesses to a rich cultural heritage, from prehistoric relics to medieval ruins. This land holds traces of ancient Iberians, Romans, and Arab castles — a living tapestry of history.
But history isn’t only found in stone — it lives in the olive trees that have stood for centuries among pines and cork oaks. Our olive oil comes from these age-old trees, producing Serrana olives with a naturally lower oleic acid content and a truly distinctive flavor. Today, in Sierra de Espadán, we continue this legacy — growing olive trees that are true guardians of time.

Our journey starts with reviving abandoned groves and committing to a 3-year transition to certified organic farming.
We proudly use 100% organic fertilizer, respectful of the land and consumers alike. We encourage biodiversity through natural ground cover and monitor our olive trees with regular soil and nutrient testing.
This holistic approach guarantees the health of our soil, vitality of our crops, and the wellbeing of the entire ecosystem.
